Sometimes We Use Amazing Recipes We Saw on TV

Last week Jeffy brought home a terrible stomach virus and missed the entire week of school.  We got home from an amazing mini-vacay weekend for my birthday to my favorite president of all time - Franklin Delano Roosevelt!!!! - and he got sick later that evening after an awesome job driving home in falling snow the whole way back.  Two days later I got sick.  It was terrible.  This is the kind of thing you would not even wish on your worst enemy if you had one.

The one bonus was that we got to catch up on everything we DVR'd from The Chew to CBS Sunday Morning to Food Network's The Kitchen.  Yes.  We watch a lot of food television.  One of the episodes of The Chew we watched from our sickbed couch had an amazing Michael Symon recipe for poached eggs on avocado toast.

I tried to poach an egg once before.  It was ok, but I overcooked it a little so when I split it accidentally lifting it to my plate, it did not ooze that "liquid gold" as Symon likes to call it.  When we watched this segment we were intrigued and decided that we would try it instead of pancakes Sunday morning.

The secret to poaching the egg is to stir the water before dropping the egg into it, thus creating the egg's very own whirlpool.  This allowed for the proteins around the yolk to set up closer to the yolk than my overcooked, wannabe attempt at poaching.  That whirlpool, man.  It works!  We were super proud!  We poached two eggs each!

What made the dish especially delicious aside from our victory over the poaching technique was the capers added to the avocado mash.  It adds a little bite that the dish needs and made it oh so tastey!  We did not even need all the mash from a whole avocado for our two egg toasts each, but we ended up eating all the avocado because those capers made it addicting!
